Lettuces: A colorful variety of Bibb, Romaine, Oak Leaf and Red and Green Leaf lettuces. Highly nutritious and equally delicious, these lettuces have the extra benefits of being locally grown and are herbicide and pesticide free.

Shade-grown Lacinato Kale: This superfood is packed full of vitamins and antioxidants. While most kale is quite bitter, ours is grown in the shade and tastes more sweet than bitter. Without the bitter component, the culinary combinations are endless.

Sprouts: The wonder food of the natural world--one of the freshest and most nutritious of all vegetables available to the human diet. In the lineup: flavorful Broccoli, spicy Radish, nutty Sunflower, and tender Burgundy Amaranth.

Basil: Needs no introduction. We raise a rotating variety, from Genovese, to Thai, to the Japanese variety Red Shiso.

Swiss Chard: The popular and nutritious green is best trimmed, sliced thin, and sautéed or steamed, then served with a drizzle of olive oil or lemon juice, a pinch of salt, and a sprinkle of crushed red pepper.

Raising Healthy Fish

We raise more than 2000 fish in our sustainable Aquaponics systems. While the fish waste acts as natural fertilizer for plant growth, the plants return the favor by filtering the fish's water.

Redear Sunfish, aka Shellcracker. A native Texas fish, Sunfish make an excellent simply grilled fish. Delicious!

Bluegill: Another native Texan, this beautiful fish is best prepared simply, either filleted or grilled whole.

Black Crappie: The clean and rich flavor is incomparable in this cold water Texas native.
